Ziggy's Bite-Size Zucchini Fritters

4 cups zucchini grated fine (about 3 medium zucchinis) -- perfect job for the food processor
1 medium onion diced, or 3 scallions chopped fine
1 jalapeno or 2 Thai bird chilies, diced fine (optional)
You favorite beer, or soymilk if there is no beer on hand
1 1/2 to 2 cups flour
1/3 cup Nutritional Yeast
1 tbsp. baking powder, only if you're using soymilk
1 1/2 to 2 tsp. salt
Ground pepper to taste
Vegetable oil for frying

Mix flour, nutritional yeast, salt, pepper and baking powder (if you're using soymilk.)  Add zucchini, onions and hot pepper.  Mix thoroughly.  Add soy or at milk to form a thick batter.  Heat a large frying pan and add about 1/4 inch of vegetable oil.  Drop batter about a teaspoon at a time into hot fat.  Fry until golden brown, then turn and brown on the other side.  You can flatten fritters once turned if you like.  Drain (briefly) on paper towel.  These can be served immediately, or set on an ovenproof platter and rewarmed in a 350 degree oven when you are ready to serve.

Yield: about 24 fritters


People are on their way.  You haven't got time for ingredients.  What will you do?
Hamlet's Hammocks

1 package of Pepperidge Farm Puff Pastry (never be without it)
1 package of Yves Canadian Bacon (ditto)

Heat oven to 400 degrees.

Roll out Puff Pastry according to package directions.  Cut into 2 inch strips, then cut the strips into tall triangles by making a series of diagonal slices across the length of the strip.  Slice "bacon" into matchsticks.  Place two matchsticks in each triangle of dough, starting at the wide end.  Roll up and set on a baking sheet.  Parchment paper or silicone liner will save cleanup.  Bake at 400 degrees for about 10 minutes, or until puffed and golden.  Serve immediately.  These go VERY quickly so make lots and lots.
